This Frozen Coconut Key Lime Tart is really, really good. It’s so refreshing on a hot July day, or even a cold day in December. We love, love, love it! Really, we love anything with coconut and lime is sure to be a winner. There is coconut in both the crust and the filling. That little bit of shredded coconut really adds something special to the crust. The filling has cream of coconut, which isn’t […]
Strawberry Season!
(picked last year at Secor Strawberry Farm) I gave my daughter a choice for today– “Should we go to the zoo, the park, or go pick strawberries?” Her reply– “Pick strawberries AND then go to the park.” Oh, geez. I hope I have enough energy for that. The weather is going to unbelievably beautiful today and it may be our last big outing before I curl up and die in front of my A/C window […]
Shirley Temple Floats
Being a mom to young kids, I am fond of non-alcholic cocktails and mixed drinks. I particularly like a nice, cold Shirley Temple, especially when it’s warm outside. A Shirley Temple can be made with ginger ale, 7-Up, or Sprite. It may or may not contain orange juice. Grenadine provides the lovely pink color, and a maraschino cherry tops it off. My Shirley Temple cocktails usually consist of Sprite (my favorite) and maraschino cherry juice/brine rather […]
Key Lime Tart
I have to preface this by saying that I thought this Key Lime Tart was going to be a complete failure when I took it out of the oven. There didn’t seem to be enough filling. I thought it had baked too long. (That and my oven, depending on the day, is 50+ degrees hotter than it says on the knob. Glad I have an oven thermometer!) It ended up being perfect. I loved […]
Summer Fruit Johnnycake Cobbler
While I had those freshly picked red currants, I looked around for recipes to try using them and the other summer fruit I had on hand. I found several recipes I liked. I came across a wonderful recipe for Johnnycake Cobbler in my Baking With Julia cookbook. (Have you bought it yet? You should….) I really liked the idea of using cornmeal to make the biscuit topping. And it called for plums and nectarines, both […]
Aprium Sherbet
This might have to be revisited at another point. I really loved the flavors in this sherbet. It wasn’t too sweet. The flavor of the fruit really comes through. I did add a little almond extract and a little teeny, tiny bit of vanilla. Next time–no vanilla. The almond was a good addition. I even think it would be nice to add a little amaretto to this. I’d also like to try it without the […]
Berry Picking and Red Berry Sorbet
To say I have been slightly obsessed with picking berries this summer would be a slight understatement. Ever since I heard that a friend of mine would head up to a local farm to pick her own fruits and veggies last summer, I knew I MUST do that this summer. And so far, so good. We ventured up north from where we live to Dutchess County, NY to pick some luscious blueberries, and the strawberries […]
Fresh Strawberry Sorbet
It’s strawberry season! And while we love eating those ripe, juicy red berries right off the plant, it’s mighty refreshing to turn them into strawberry sorbet. This easy recipe combines a simple syrup made of sugar and water with fresh strawberries, a little lemon juice, and a pinch of salt to create a vibrant, summery sorbet.
Creamy Key Lime Pie Ice Cream
This is one of our favorite ice cream recipes. This Creamy Key Lime Pie Ice Cream is rich and tangy. It’s great on its own, but you could put the ice cream into a crust for a frozen Key Lime Pie. The cream cheese gives is a bit of a cheesecake flavor that is really, really good. Creamy Key Lime Pie Ice Cream Original Recipe and pictures by Lindsey Johnson Ingredients: 8 oz. cream cheese1 […]
