As I mentioned last week, I was able to attend evo conference. I was able to attend a fun dinner sponsored by the California Avocado Commission that included quite possibly the most delicious avocados I have ever eaten in my life. (I brought some home with me.) Before a cooking demo by THE Too Hot Tamales, we all participated in a bit of good-natured competition in the form of an Iron Chef-like Guacamole Fest. Susan […]
Roasted Tomato Salsa
I love me some salsa. And I really love me some of this salsa. I’ve already made it twice in one week. The chips are optional, by the way. A spoonful (or ten) will hit the spot. I had some grocery store tomatoes ripening on my counter. (I know, I know, I know. Grocery store tomatoes…bleh.) Like I’ve said before, if I can’t have fresh tomatoes from the garden, I don’t want them fresh. I […]
Quick Pickled Strawberries
After eating lunch at Finca in Salt Lake City a few weeks ago, I haven’t been able to stop thinking about the pickled strawberries I had on my salad. I decided to try making some quick pickled strawberries at home. Instead of using whole spices, I used fresh rosemary (thank you, Christie) and a vanilla bean. These are addictive, I tell you. Addictive!
Provolone Grilled Cheese with Tomato and Arugula-Oregano Pesto
Sometimes I say to myself, “Really? You’re going to post this on your blog? Something people don’t really need a recipe for?” And I say answer, “Yes. I am. Because you never know. And it’s really, really tasty. And look how pretty it is!” So here’s a recipe for a grilled cheese sandwich. :) My family goes crazy for pesto. I can’t remember the last time I just made plain old basil pesto. Probably since […]
Salmon Nicoise Salad with Carrot and Yogurt Sauce
I was at Whole Foods in Downtown Salt Lake City last week, and guess what I saw? A big ol’ sign announcing they had Copper River Salmon. They had a big, beautiful fillet in the case that the guy at the counter told me it go very quickly. I told him I already had some at home and would be getting more, but I was doing my best to find all the places I could […]
Chicken Gyros with Tzatziki
In June of 2006, right after my son was born, my dear friend Jenni brought us Chicken Gyros for dinner. WHOA. They were so good. I begged her for the recipe. Ever since that day, we have been making these regularly. The marinade is nothing more than some fresh herbs, sliced onion, olive oil, lemon juice, salt and pepper. Here’s a little tip: if you don’t have room in your fridge when marinating, place it […]
Homemade Ranch Dressing
Remember what I said about salad with ranch dressing a few days ago? I meant that gloopy, greasy, overly sweet stuff from the bottle. Not this glorious creamy dressing that might as well be from heaven. My husband claimed to hate ranch dressing until I started making it from scratch. Truthfully, I didn’t even like ranch dressing all that much until I started making it from scratch. I’m not going to lie to you and […]
Broccoli Microgreen-Quinoa Salad with Roasted Garlic Dressing
Yesterday I ran up to La Nay Ferme before I took my youngest to her fabulous art class to pick up my pot of broccoli microgreens. I really, really, really love microgreens and broccoli microgreens are so good. I thought about how I wanted to use them for my lunch yesterday. It had been awhile since my last quinoa salad…so that’s what I did. I went with a garlic dressing here. You could swap it […]
Peach Balsamic Vanilla Vinaigrette
Salad is my favorite food, I think. I eat salad almost every single day. I even wrote a salad guide on Make and Takes a few years ago. I like to think I’m somewhat of an expert, you see. Salads are one of the best ways to fit in all your leafy greens, and as I quickly learned when I overcame my salad-phobia, a very delicious way. I tend to like sweet salads with a […]
White Beans with Carrot and Radish Top Gremolata and Pan-Roasted Root Veggies
That was a mouthful to type! I kinda have a penchant for beans–especially white beans. I kinda just love them a lot. For awhile I’ve been wanting to make some braised beans with gremolata. I was going to use kale and parsley from my garden and I never got around to it. If you’ve never had gremolata, then you’ve been missing out! If you don’t know what it is, let me bring some joy into […]
