A healthy, colorful salad made with cauliflower couscous and loads of fresh, raw veggies and fruits.
Ingredients
1 large head cauliflower, cut into florets
3-4 green onions, thinly sliced
1 green apple, diced
1 cup diced cucumber
1 cup diced celery
1 cup shredded carrots (I used rainbow carrots)
1 jalapeƱo, seeds and ribs removed, minced
2 garlic cloves, finely minced
Juice of 1 lemon
1 Tablespoon olive oil
½ cup chopped fresh mint
Salt and pepper, to taste
Instructions
Place the cauliflower florets in a food processor, working in two batches if needed, and pulse until finely chopped. Transfer to a large bowl. Add the remaining ingredients. Toss well. Serve immediately.
