Cauliflower Couscous Salad

A healthy, colorful salad made with cauliflower couscous and loads of fresh, raw veggies and fruits.
  • 1 large head cauliflower, cut into florets
  • 3-4 green onions, thinly sliced
  • 1 green apple, diced
  • 1 cup diced cucumber
  • 1 cup diced celery
  • 1 cup shredded carrots (I used rainbow carrots)
  • 1 jalapeño, seeds and ribs removed, minced
  • 2 garlic cloves, finely minced
  • Juice of 1 lemon
  • 1 Tablespoon olive oil
  • ½ cup chopped fresh mint
  • Salt and pepper, to taste
  1. Place the cauliflower florets in a food processor, working in two batches if needed, and pulse until finely chopped. Transfer to a large bowl. Add the remaining ingredients. Toss well. Serve immediately.
