This smoothie is reminiscent of island cocktails with the additions of pineapple, mango, and coconut milk.
Ingredients
2 cups fresh or frozen pineapple chunks
1 to 2 cups fresh or frozen mango chunks
½ to 1 cup light coconut milk
a few big handfuls fresh baby spinach
a little honey or agave, if desired
ice
Instructions
Place the fruit into a highspeed blender. Puree until smooth. Add the spinach and ice and add enough coconut milk to make a smooth puree. Serve immediately.
