Homemade Chorizo Sausage

Easy homemade chorizo is a leaner, very flavorful alternative to store-bought sausage.

Ingredients

  • 1 1/2 lbs. ground pork
  • 12 Tbsp. white vinegar
  • 1 Tbsp. paprika
  • 1 Tbsp. chili powder
  • 1 tsp. salt
  • 1/2 tsp. coriander
  • 1/4 tsp. each: cloves, black pepper, Mexican oregano, ground cumin
  • 2 garlic cloves

Instructions

  1. Mix all the ingredients together in a medium bowl. Cover with plastic wrap and refrigerate overnight, or up to 2-3 days until ready to use.

Notes

For best flavor, make chorizo the night before or up to several days in advance.
