Gingerbread Spiced Eggless Eggnog

A deliciously sweet spiced “eggnog” made without eggs.

Ingredients

  • 1 (14 ounce) can sweetened condensed milk
  • 34 cups low fat milk
  • 1 cup whipping cream
  • 24 Tablespoons unsulfured molasses (use less for a lighter flavor)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • pinch cardamom
  • optional: 1/4 cup rum or 1/2 teaspoon rum extract

Instructions

  1. Whisk everything together in a big bowl. Transfer to a pitcher, if desired. Serve chilled.

Notes

Note: Add more or less milk depending on how sweet you like your ‘nog. Use less molasses for a lighter flavor. Leave out the alcohol for a kid-friendly drink or use extract instead.
Variations:
-Add a little pumpkin puree for pumpkin pie “eggnog”
-Leave out the molasses, ginger, cinnamon, cloves and cardamom for plain “eggnog”
-Whisk in some cocoa powder for chocolate ‘nog
-Mix half and half with soda water or ginger soda for a festive fizzy drink
