Today’s Menu

Sorry for the lack of posts. I finally got a new computer mouse and hopefully have figured out why my computer is having a hard time uploading photos, etc.

Here’s my attempt at our meals for today. Maybe I’ll be able to do this the whole week. And then I’ll try for a month!

Breakfast:

Sour Cream-Cherry Muffins with Pecan Streusel (I just ate a warm one…so good.)

Scrambled eggs
Home Fries (from leftover boiled potatoes)

Lunch:

Ham and Cream Cheese Roll-Ups (on a tortilla, for the kids)

Spinach Salad (for me)


Fresh Berries (they are on sale at Sunflower, Macey’s, and Walmart for you locals!)

Dinner:
Lasagna Bolognese

Roasted Broccoli with Garlic (toss in olive oil, add sliced garlic, roast at 425 degrees for about 25 minutes)

Homemade Rolls

Buttermilk Panna Cotta with Strawberries

  1. So do you cook like this every day or just most days?

    Also, do you make your own noodles for the pasta?

    I feel like a major slacker in the kitchen these days. I am making the muffins today though. I’ve had the recipe posted on my fridge for a couple weeks it feels like.

  2. I have a bolognese (sp) recipe I always looks at and this is just what I needed to make me want to try it!! I used to hate Maceys, but it’s prices are so great I can’t help, but love it now!!
