Summer Menu #8: Warm Potato and Mixed Greens Salad

Is it weird to have a dinner made up of two salads? I don’t think so.

Warm Potato Salad with Sausage, Apples and Mustard-Shallot Vinaigrette

Mixed Greens with Pears, Dried Black Currants and Apricot Vinaigrette

Add some sparkling water or lemonade and crusty bread and you’ve got yourself a tasty summer meal.

  1. I love salad days Lindsey. I would never have eaten this type of potato salad as a child. It was always the mayo type for me. Funny how our tastes change as we get older. I now prefer it done this way. Love having fruit in a green salad. It’s the best! Great meal there!
