Yet another great combo we ate last week–
Mixed Greens Salad with Sun-Dried Tomato Vinaigrette (we actually used Feta instead of goat cheese and added brine-cured Mediterranean olives)
San Pellegrino with fresh lime wedges

I am a little bit confused, I had always thought that Feta was a goat milk cheese?
Hey, Em! Great question–
Feta is sometimes made with goat milk (more often in Greece, I think…), but usually it’s made with sheep milk with a little goat milk added in. The kind I used was made from sheep milk. I guess I always think of goat milk cheese as being fresh, like Chevre, but you are right to ask–there are many other kinds of goat milk cheeses out there.
That’s a delicious looking meal! I have never had a gyro, or maybe I have. I think they may call them kebabs over here??
Yummy!
I can’t think of anything I’d rather have for dinner. Tonight! :-)
