Sun-Dried Tomato DressingFrom The Joy of Cooking
Ingredients:1-2 shallots, quartered 1 to 2 garlic cloves, halved 6 sun-dried tomato halves in oil, drained and chopped (I used a half jar of Trader Joe’s julienned SDT’) 2 Tbsp. balsamic vinegar (I used white balsamic) 1 Tbsp. fresh chopped basil (or 1 tsp. dried basil) salt and freshly ground black pepper 1/2 cup olive oil Instructions:Place shallots and garlic cloves in a food processor or blender: Pulse until finely minced. Add sun-dried tomatoes, balsamic vinegar, basil, salt and pepper. Process until finely chopped. With the machine running, add the olive oil slowly through the feed hole and continue processing until smooth. Taste and adjust seasonings. Use immediately, or cover and refrigerate up to 1 week.

I will totally try this dressing. It is different, as you say, than the usual sweet dressings. As for the salad…it is a home run already!
That salad sounds fabulous. I love the idea of the sun dried tomato dressing. Over here in England they don’t do salad dressings much and when they do it’s usually a vinaigrette. I have come to love them much more than the sweet salad dressings from home.
