Spring-Summer Menu #4: Chicken Soft Tacos

We’ve started eating dinner out on our patio, which is so wonderful considering we can’t all eat in the kitchen at the same time. (You know, small apartment, etc…)

Anyway, I’ve been making a lot healthier meals for us as the weather has been warmer and who’s in the mood for heavy meals? Not us.

The chicken soft tacos were really good. I am going to use the leftover chicken filling to make enchiladas tonight. So stay tuned for a fabulous recipe for homemade guajillo chile sauce.

Jicama Salad
Fresh Tomato Salsa
Gucamole
Tortilla Chips
