Yesterday was a gloriously beautiful day. Instead of heading to the laundromat for some quality family time, I opted for making a nice dinner. Dinner is hard to find around our home these days, but there is no shortage of desserts. (As I’m sure you’ve noticed.)
I’m going to try to come up with a bunch of easy Spring/Summer menus that don’t require too much effort and will taste like you’re at the “Hungry House”, as my daughter refers to restaurants.
I’ve been craving something salad. Any kind will do, but I really like salads with balsamic vinaigrette.
Anyway, last night I decided to make Rosemary Balsamic Chicken Salad.
(We used to eat this salad bi-monthly until we both got sick of it.)
Another good option is Mixed Greens with Dried Black Currants and Toasted Hazelnuts. Just add some sliced, cooked chicken breasts.
Rice Pilaf–my little guy loves this, so I made it instead of roasted potatoes.

I love lavender, and now in limeade. Yum.
