Tilapia is a great fish for anyone who doesn’t love fish. It’s mild and versatile, and is very low in fat. It’s a great fish for those who are counting calories.
Lemon Pepper Tilapia
Ingredients:
1 tsp. olive oil
4 tilapia loins (or filets)
2 tsp. lemon pepper seasoning
Instructions:
Preheat oven to 400 degrees F.
Line a baking sheet with parchment paper. Drizzle the tilapia with olive oil and sprinkle with lemon pepper. Use your hands to rub the seasoning and oil into the fish. Place the fish on the baking sheet.
Bake fish for about 15 minutes, or until it flakes easily with a fork.

Sara–I bought it frozen at Trader Joe’s. They just started carrying it again–Tilapia loins in a blue bag.
You can get fresh at Costco in a gigantic pack (near the Salmon), or as always, Whole Foods has the best, freshest fish around. (Unless you visit a fishmonger.)
