Fresh Tomato Salsa


Double or triple this recipe for a crowd…

Fresh Tomato Salsa
Makes about 1 cup

Ingredients: 2-3 ripe Roma tomatoes, diced into 1/8″ pieces
1 jalapeno, seeded and ribs removed, minced (if you like it spicy you can leave the seeds and ribs)
2 Tbsp. minced onion (or 1 small boiling onion works well, too)
juice of 1 lime
1-2 Tbsp. fresh cilantro, chopped
salt and pepper, to taste

Instructions: Mix everything together and season with salt and pepper.
