Black Bean, Corn and Chicken Chorizo Soup

I felt inspired by this, and made this:

Black Bean, Corn, and Chicken Chorizo Soup

1 lb. chicken chorizo (mine came from Trader Joe’s), cooked and cut into chunks
1-2 cups frozen corn
1 lb. cooked black beans (I like to cook my own beans, you can use 2 cans if you like)
2 cans diced tomatoes, with juice
a little Adobo Seasoning
water or chicken stock

Put it all in a pan and heat it through. Taste for seasonings. (The chorizo I used was very spicy, garlicky and salty, so I left the rest of the soup a little more plainly spiced.)

Top with a dollop of sour cream. Serve it with corn chips or quesadillas.

Makes enough for a crowd!
