I made this Mixed Green Salad with Strawberries and Avocados for a BBQ today and it was very, very good. I loved the way it was fruity and sweet, but the Parmesan cheese added just a little saltiness. I am definitely making this again! I would maybe even add thinly sliced red onion next time.
Mixed Greens Salad with Strawberries, Avocado, and Candied Pecans
For a large salad to feed about 6 adults:
Ingredients:
1 bag organic mesclun mix
1 bag baby spinach
1 lb. strawberries, hulled and sliced
1-2 avocados, sliced
about 1 cup candied pecans, chopped
Shredded parmesan cheese
Poppyseed Vinaigrette
Instructions:
Toss all ingredients together and serve. You can dress the salad beforehand or let each person dress their own.
