Portuguese Style Cod and Veggies

Ingredients:
4 large cod fillets
4-5 potatoes, sliced into 1/4″ rounds
1 red pepper, thinly sliced
1 large onion, thinly sliced
olive oil
salt and pepper

Instructions:
Place potatoes, red pepper and onions in a roasting pan or 9″ by 13″ baking dish. Sprinkle with salt and pepper. Drizzle a little olive oil over the vegetables to coat lightly and toss. Place in a 400 degree oven for about 30 minutes. Cover with foil if they are getting too brown or burning.

Cut the cod into evenly sized chunks, or leave whole if you want to. Season with salt and pepper. Place the cod on top of the potatoes, peppers and onions. Drizzle with more olive oil and continue baking until the fish is done and flakes easily with a fork–about 8 to 10 minutes for chunks, a little longer for fillets. Keep checking for donenes because you DO NOT want to overcook it.

Drizzle with fresh olive oil before serving.

  1. This looks super yummy and allergen-free-friendly! I bet it would be great with a Spanish olive oil. I was curious to know what kind of potatoes you used – new potatoes like yukons and/or red bliss or starchy ones like russets/Idaho? Thanks!

  2. Yes it is a great tasty dish, with Spanish olive oil. I live in Spain and I was foxed by the last sentence in the recipe “Keep checking for donenes” and I hadn’t a clue what it meant until it suddenely struck me!!
