Pecan Cherry Jam Bars

Pecan Cherry Bars

1/2 cup (1 stick) butter, at room temperature
1/2 cups all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 tsp. baking powder
1/2 cup packed light-brown sugar
1/4 cup white sugar
1 large egg yolk
3/4 cup chopped pecans
1/2 cup sour cherry jam (from Germany if you can find it)

Grease an 8″ square pan with butter. Preheat oven to 350 degrees. Whisk the flour, salt, cinnamon, and baking powder in a large bowl.

In a large mixing bowl and using an electric mixer, cream butter and sugars until light in color and fluffy. Add the egg yolk. Add the flour mixture a little bit at a time while beating on low speed. By the last addition of flour, the dough will be crumbly, but you will be able to press it together. Add the chopped pecans.

Measure the jam into a small bowl and stir it with a fork or spoon to make it easier to spread.

Press half the dough into the bottom of the prepared pan. Spread the jam over the top, but make sure to leave about 1/4″ of space between jam and the edge of the pan. Crumble the remaining dough over the top of the jam. Lightly press down on the top to form a good layer.

Bake for about 25 to 30 minutes. The top will be golden brown. With these, it’s better to overbake a little than to underbake. Completely cool the bars in the pan. Using a serrated knife, cut into 16 bars. Eat them up!

  1. Are these the ones you made Saturday? There were only two left and I took them home and had them for 10:00p.m. snack. Midnight, I’m asleep by then.

  2. Yes, these are the same ones from Saturday. They didn’t turn out as great as they normally do–they still tasted good. After all, we ate them. But, I think I underbaked them because I left making them until the last minute. You and I were probably eating them at the same exact moment.
