Saturday Smoothie: Kale Sunrise Green Smoothie

Ah, the green smoothie. For me, it’s a thing of beauty. I love eating my greens, but I also love starting my day by sipping them in a cold green smoothie. It’s kind of addicting! Once you start, you’ll never go back. I’m calling this one Kale Sunrise Smoothie because it tastes kind of tropical and I need some of that right now. (It’s getting COLD here!)

I normally don’t like kale in smoothies, but I found that this extra dark green lacinato kale tastes pretty good to me. I tend to use a higher kale to fruit ratio than most people use. I want to know it’s in there. If you don’t like kale or don’t have any on hand, totally swap it for some chard or spinach. I used fresh fruit, but frozen is fine too. If you want it extra cold, use 1 cup of ice or use frozen fruit in place of fresh.

Kale Sunrise Green Smoothie



Ingredients:

1 1/2 cups coconut water (or filtered water)
1 large ripe pear
1 medium ripe banana
1 orange, peeled and any seeds removed
1 cup pineapple chunks
8 medium kale leaves
1 cup ice

Instructions:

For high speed blender: Place ingredients in blender in the order listed. Start on low, turning to high until totally blended.

For regular blender: Puree coconut water and kale. Add the remaining ingredients and blend until smooth.

Makes about 5 1/2 cups, or 2-3 large servings

    1. Hello, Pam, my friend! You can get it for sure at Whole Foods and Sprouts in bunches. Trader Joe’s has some washed and chopped in bags in the produce section. Harmon’s might. Not sure about Macey’s. Walmart does not. It will be labeled as Tuscan, Dinosaur, or Lacinato.
