I’ve been enjoying my molcajete to make guacamole. Of course, you don’t really need a molcajete, but it’s fun to use one anyway since I have it. I’ve noticed that some of the higher end Mexican restaurants will make table side guac using one. Supposedly it adds a unique flavor the the guacamole. I just think it’s kind of fun to use it.

Guacamole made with spicy tomatillo salsa.

Ingredients

- 2 ripe avocados
- 1/2 cup store-bought or homemade tomatillo salsa
- Sea salt, to taste
- Juice of 1 lime
Instructions
- Mash the avocados in a molcajete or with a fork. Mix in the salsa and lime juice. Taste and add sea salt.

Note:
If you want your guacamole to be spicy, then roughly chop a serrano chile or a jalapeno and pound it into a paste in the molcajete before you mash the avocados, or finely chop and add in if you are using a fork.

I love guacamole and I’m always trying new recipes for it. Can’t wait to try this one!
