Soft and Chewy Ginger Cookies

Ingredients:

4 cups flour
4 tsp baking soda
1 tsp salt
1 Tbsp ginger
2 tsp cinnamon
1 ½ cups oil
2 cups sugar
2 eggs
½ cup molasses

Instructions:
Sift dry ingredients together. Pour oil into mixing bowl. Add sugar and mix until sugar is wet, add eggs and mix well. Add molasses. On low speed mix in dry ingredients a little at a time. Dough will be slightly stiff, and oily. Refrigerate until dough holds the shape of a ball. Roll into 1” balls and roll balls in granulated sugar. Bake at 350 F for 8 minutes on an ungreased baking sheet. Let cool slightly on pan and remove to racks. Best if baked same day you make the dough.

**Note: The great thing about these is that they are soooo soft. Do not under any circumstances think that you can make the dough and freeze it for later. It doesn’t work. I know. I wasted a double batch one time.
